Healthy eating: Lentil and Kale Soup

With autumn really setting in, here’s a hearty soup with super-healthy Kale and lentils - it’s the perfect comfort food for a cold, wet day.

Cooking time: 25 minutesIngredients - serves 4:
- 150g Puy lentils
- 2 x 200g packs kale
- 1.5 litres vegetable stock
- 195g can sweetcorn, drained
- 4 sprigs thyme
- 400g can chopped tomatoes
Method:
Cook the lentils in boiling water for 15 minutes, drain and return to the pan, add the kale, stock and the remaining ingredients. Simmer covered for 8 minutes then season to taste before serving.
Cooks tip:
Try using canned lentils for an even quicker meal.

- 2.9g fat (of which 0.4g saturated fat)
- 1.5g salt
