Recipe week: Peanut Butter Cookies

Peanut Butter is a brilliant food for sporty types since the high fibre, protein content are perfect fuel, especially in endurance sports. We love these peanut butter cookies, but be aware they are really, very moreish!
Ingredients
50g soft light brown sugar
50g caster sugar
50g unsalted butter (soft)
1 medium egg
1tsp honey
1tsp vanilla
200g Whole Earth crunchy peanut butter
100g plain flour
1tsp bicarbonate of soda
A pinch of salt
Method
1. Pre-Heat the oven to 170.
2. Measure out and combine the dry ingredients in a bowl and set aside
3. Cream together the butter and sugars until mixed.
4. Add in the egg, vanilla, honey and Whole Earth peanut butter. Blend until smooth.
5. Add in the dry ingredients and mix well until you have a thick batter.
6. Using generous rounded tablespoons, place into roughly circular shapes on a baking tray (you should get 12 exactly)
7. Put into the center of the oven and bake for 10-12 minutes.
