Recipe: Chia and Herb Crusted Salmon
Chia see is a brilliant visceral fat-fighting food. Bursting with Omega 3, fibre and antioxidants – these tiny little seeds could hold the key to reducing your visceral fat levels and giving you a new lease on life.
Chia is also incredibly versatile – chuck it in smoothies, stir it into your porridge, sprinkle it on yoghurt – the possibilities are endless. This recipe for Chia and herb crusted salmon is a current favourite in the Sportsister office.
Chia and Herb Crusted Salmon
½ cup finely chopped parsley
1 tsp grated lemon zest
½ cup Chia seeds
1 tsp sea salt and pepper
1 tsp olive oil
4 salmon fillets
Method
Place the parsley, lemon zest, Chia seeds and salt and pepper in a blender and blend for 30-60 seconds.
Remove from blender and set aside.
Brush the salmon fillets with olive oil and sprinkle the blended mixture on top of each fillet.
Place the fillets in a baking dish lined with baking paper and bake at 350F for 6-10 minutes. [Cooking time will vary depending on the size of your fillets].
Serve with parsley leaves and lemon wedges.
