Recipe: Madeleine Shaw’s Roast Chicken with Pumpkin and Red Onion

We’re big fans of pumpkin. Packed with vital antioxidants and vitamins, it also contains plenty of potassium which helps to restore our balance of electrolytes – so it’s perfect to eat post workout!

And the options to include the bright orange veggie in our diet seem endless; we’ve found pumpkin bread, pumpkin ravioli, pumpkin pie, pumpkin risotto and yes, even pumpkin beer! But we thought for now, we’d keep it really simple with this delicious chicken dinner given to us by nutritional health coach Madeleine Shaw.

Serves: 4-6 people

Ingredient:

1 free range chicken
2 Tbsp of cumin seeds
2 large pinches of salt (Celtic sea salt or Himalayan salt)
1 pumpkin
2 red onions

Method:

- Set the oven to 200ºC.
- With some scissors cut your chicken into 6- 8 pieces.
- With a pestle and mortar grind the cumin and one of the large pinches of salt. Rub this into the chicken and place it on a large roasting tray.
- Cut the pumpkin up into bitesize chunks and discard the skin, peel the onions and cut into quarters.
- Scatter all of this in-between the chicken. Cover with the other pinch of salt.
- Roast in the oven for 45 minutes.
