Louise Hazel’s Quinoa, Cranberry and Italian sausage stuffing
Oh, how we love the delicious food at this time of year. Succulent roast turkey, golden fluffy potatoes and hot mince pies, not to mention the endless chocolate! Now, here’s a question: would you give up your presents on Christmas day or all the festive food? At Sportsister HQ we can’t quite make up our minds!
With so many different recipes to choose from, we thought we’d ask Olympic heptathlete and our good friend Louise Hazel for a few of her favourite festive treats to enjoy at this time of year. After all, if you can’t relish in a little indulgence over Christmas, when can you?
Ingredients
1 cup quinoa
3/4 chopped walnuts
3/4 chopped dried cranberries
2 cups of water or stock
1 chopped medium onion
2 chopped garlic cloves
1kg Italian turkey sausage
2 tsp dried sage
2 tsp dried thyme
Pinch of salt and pepper
Method
1. Bring quinoa and water to boil then leave to simmer for 15 minutes
2. In a large saucepan, melt the butter over a medium heat. Add onion and garlic and sauté for one-and-a half minutes
3. Add the Italian turkey sausage and cook until browned, breaking it up with a wooden spoon during the cooking process
4. Stir in the sage, thyme, cooked quinoa, salt and pepper until well combined. Then stir in the walnuts and cranberries
