Recipe: Lentil, feta and sun-dried tomato burgers
It’s time to love your lentils! Our good friends the Veggie Runners have shared with us this delicious lentil, feta and sun-dried tomato burger recipe that we think is the ideal recovery meal after any tough workout.
A perfect combination of sweet and sour flavours, the meal is jam-packed with nutrients including fibre and vitamins A, C and K, as well as lots of protein. If you add a wholemeal roll for a few extra carbohydrates, we think that this burger is definitely something to try!
Serves: 6-8 people
Ingredients:
150g red or green split lentils (dry weight)
8 sun-dried tomatoes, roughly chopped
50g feta cheese
1 egg, beaten
1 onion, diced
2 cloves garlic, finely sliced
1 tablespoon tomato puree (optional)
Large handful fresh mint, finely chopped
Salt and black pepper to season
Vegetable oil for frying
Fry this:
1. Cook the lentils until soft (DON’T add salt to the cooking water or they’ll stay hard forever)
2. Drain well
3. Place all of the ingredients in a large bowl and mix together well
4. Make into burger shapes – the size is up to you – with your hands
5. Shallow fry until lightly browned on both sides
SERVING SUGGESTION: Serve the burger in a wholemeal roll with salad greens and another sun-dried tomato on top. Enjoy!
