Recipe: Beetroot chocolate brownies

We never say no to chocolate in the Sportsister office, it is, quite possibly our favourite treat. So when this unusual brownie recipe landed in our inboxes we couldn’t wait to get to the kitchen and start baking.

Oh, but if you fancy trying it yourself, just a little warning; they are extremely gooey and highly addictive! Enjoy :-)

Serves: 16
Prep: 10-15 minutes
Cook: 30 minutes

Ingredients:

250g dark chocolate (70% cocoa solids)
100g butter, plus extra for greasing the tin
250g cooked beetroot, drained
3 eggs
250g light brown sugar
150g ground almonds
2 tbsp cocoa powder
1 tbsp baking powder
1 tbsp vanilla extract
1 tbsp cayenne pepper powder (optional)
Icing sugar to dust

Bake this:

1. Preheat the oven to 180°C
2. Prepare a 23cm square baking tin by greasing all over with a little butter. Line with a wide strip of baking paper, leaving two ‘tails’ at either side to help you lift the cooked brownie out of the tin
3. Break up the chocolate into squares and put into a heatproof bowl along with the butter. Set over a pan of barely simmering water and allow to gently melt, stirring to mix together as it does so
4. Tip the beetroot into a food processor and process to a puree
5. Add the melted chocolate and butter, as well as the eggs and whizz again until combined
6. Add the sugar, ground almonds, cocoa, baking powder and chilli powder (if using) and process until you have a smooth batter
7. Pour into the prepared baking tin and bake for about 30 minutes until the top is set and the brownie is starting to pull a little away from the sides of the tin. A skewer inserted into the centre will come out fairly clean, but don’t worry if it still seems a little soft as it will firm up when cooled.
8. Remove from the oven, place on a cooling rack and allow to go cool in the tin
9. When cold, using the baking paper tails, ease the brownie from the tin and cut into 16 squares. Dust the surface with a little icing sugar and enjoy!
