Recipe: Spicy Meatballs with Roasted Pumpkin
Happy Halloween! The spooky season is upon us so we thought we’d celebrate in style with this delicious seasonal recipe from our friend Nikki Bartlett.

Serves: 4-6
Ingredients:
1 pumpkin
2 onions
2 peppers
2 garlic cloves
2 red chillis
3 big tomatoes
1 kg of lean minced beef
1 egg
2 jars of creamy tomato and herb cooking sauce
2-3 handful of spinach
Salt & pepper
Coconut oil
Extra virgin olive oil
Spices: paprika and garam masala
Chilli oil
Chilli powder (optional)
Method:
Pumpkin:
- Chop into ‘chip’ size
- Place in a baking tray and season well.
- Sprinkle with extra virgin olive oil and chilli oil, (sprinkle hot chilli powder if you like spicy food)
- Bake for 40-60 minutes
Meatballs:
- Chop onions, peppers, garlic, chilli’s (deseeded) and tomatoes
- Fry off onions, pepper, garlic and chilli’s for 10 minutes with 3 teaspoons of coconut oil and one tea spoon of chilli oil
- Season. Add hot paprika, garam masala and hot chilli powder (quantities depend on your love for spice)
- Now make the meatballs: In a bowl, mix minced beef, herbs and the beaten egg
- Season the mixture with salt and pepper
- Divide the mixture into balls; however big you like to eat them, try 16-20
- Fry in a separate pan to the onions for about 10-15 minutes
- Once cooked add the tomatoes and jars of creamy tomato and herb cooking sauce, and finally add in a few hands full of chopped spinach and cook until wilted
SERVING SUGGESTION: Serve with some warm crusty bread - its delicious to dip into the sauce!
