Ingredients
4 salmon fillets
2 x tbsp. fresh grated ginger
2 x juice of limes
4 x tbsp. tamari sauce
1 x green papaya (peeled and grated)
150g x green beans (cut lengthways into quarters)
100g x cherry tomatoes (halved)
4 x juice of limes
1 x tbsp. fish sauce
1 x tsp chilli flakes
1 x bunch coriander (finely chopped but keep some leaves for the garnish!)
Method
1. Pop the grill on. Place the salmon fillets on a foiled baking tray. Place the grate ginger, squeeze of lime and tamari sauce on top and grill for 8 minutes.
2. Peel the papaya and then either pass it through a food processor on the grate blade or just use a plain old grater!
3. Separately, bring a pan of water to the boil, once boiled pop in the quartered green beans and cook for 2 minutes.
4. Then drain and run under cold water. Add these with the halved tomatoes, lime juice, fish sauce, chilli flakes and coriander to the papaya and combine well.
5. Garnish with some coriander leaves.
